Ingredients

all-purpose flour

pumpkin spice

brown sugar
1 1/2 cup

pumpkin purée
unsweetened

eggs

vegetable oil
1/2
cup
sourdough discard

teaspoon
vanilla extract
Instructions
Preheat your oven to 350 F (180 C) and grease and loaf your loaf tin.
Add all the dry ingredients to a bowl and mix until combined.
In another bowl, mix all your wet ingredients until you have a smooth mixture.
Fold the dry ingredients into the wet ingredients and mix until just combined. It is okay if there are a few dry bits or lumps left.
Pour the batter into your prepared loaf tin and place the tin in the center of the oven.
Bake your sourdough pumpkin bread for 30-35 minutes or until done.
Let it cool before taking it out of the tin and serving it with your favorite toppings.
