  • 3 teaspoons cinnamon

How to make the batter

  • Preheat your oven to 350 F (175 C) and line your cake tin with parchment paper.
  • Beat your butter and sugar until creamy and light in color.
  • Add the eggs one at a time.
  • When the eggs are fully incorporated, you add the rest of the wet ingredients.
  • Mix the flour, salt, and baking powder in a separate bowl and add them to the wet mixture.
  • Mix until just combined and set aside while you prepare the cinnamon swirl.

How to make the cinnamon swirl

  • Add the cinnamon and the sugar to a bowl and mix until combined.
  • Pour half of the batter in your cake tin and divide half of the cinnamon sugar on top.
  • Make swirls with a knife or skewer and pour the rest of the batter on top.
  • Sprinkle the sugar on top of the batter.
  • Place the tin in the center of the oven and bake for 60 minutes until done. You can check to see if your sourdough discard cinnamon bread is ready by pricking a toothpick in the center. If it comes out dry, your quick bread is done, and you can take it out of the oven.
  • Let it cool completely before adding the glaze.
